Quick Quesedillas

Description:I’ve discovered that the only people not running around losing their minds have a nanny, housekeeper, personal chef, tutor, massage therapist, and a shrink. Or they’re copious list writers. As a Type A personality, I’m in the latter category. Without my blessed lists to keep me organized, I’d go nuts. This dinner is one of my classic favorites. I keep all the ingredients on hand so I can pull off this meal in minutes-to cheers and applause. Once an actor, always an actor.
Ingredients
- 4 large 100% whole wheat soft tortillas, trans fat free
- one 396-ml (14 oz) can low-fat or fat-free refried beans, mild, medium, or hot
- 1/2 cup (125 ml) shredded light Monterey Jack cheese
- 1 cup (250 ml) salsa, mild, medium, or hot
Preparations
- Preheat the oven to warm at 200F (95C)
- Heat a large frying pan over medium heat.
- Spread 2 Tbsp (30 ml) refried beans over half of the tortilla. Place the tortilla in the frying pan.
- Sprinkle with 2 Tbsp (30 ml) of the cheese. Fold tortilla in half. Press down gently with a spatula.
- Fry until the cheese is melted and the tortilla is golden brown on one side. Flip and heat 1 more minute, or until golden brown on both sides.
- Remove from the frying pan. Keep warm in the oven until all tortillas are cooked. Cut into 4 triangles. Serve with salsa.
