Ingredients
- 2 Lbs Lean Ground Beef
- 1 Onion, Chopped
- 1 Garlic Clove, Minced
- 2 Tbsp. Chili Powder
- 3 Cups Tomato Sauce
- 1 Tsp. Sugar
- 1 Tsp. Salt
- 1/2 Cup Sliced Black Olives
- 2 - 4 oz cans chopped green chilies
- Sliced Jalapeno Pepper
- 2 Cupps Ricotta Cheese
- 1 Egg, Beaten
- 2 Cups Grated Monterey Jack
- 12 Soft Flour Tortillas
- 1 Cup Grated Cheddar Cheese
Preparations
Brown meat and drain.
Add onions and garlic; sautee until soft. Sprinkle with chili and mix well.Add tomato sauce, sugar, salt, olives, chilies and Jalapeno. Simmer 15 minutes. Beat Ricotta and egg together. Set aside. In a 9. X 13. pan, layer 1/3 meat mixture, 1/2 the Monterey Jack cheese, 1/2 the Ricotta followed by 1/2 the tortillas. Repeat process ending with meat sauce on top. Sprinkle with cheddar cheese. Bake at 350f for 20 minutes. Serve toppings (green onions, sour cream, salsa) at table in individual bowls.
